backstrap sinew
I just got 12,5 kilos of old cow backstrap from a butcher, have cost me aprox.100 USD, but tthe sinew have flesh and grease, is not clean.
Very long 50-60 cm.
I wonder how can I remove the thin skin that cover the sinew.
The flesh is relatvely easy to clean out, but the grease and the skin emoving can take hours.
Any advice? Is there a secret or is just rough and dirty work?

I used to deal with backsinew for twice.Natives in my city divided it into 2 parts--the back backsinew and the front backsinew .Both parts are over 40cm and they work well.
According to my experence of backsinew ,you can take away the meat and fat ,but I don't think it necessary to take off the outter skin .When dry,it is much thinner than paper.you can easily get rid of it when you hammer the sinew .
